The chefs of Toro & Las Montañas unite for two unforgettable nights of Latin American flavors, expertly paired with South American wines. Experience a perfect harmony of flavor, aroma, and tradition.
The six-course menu begins with Trio Ceviche, a vibrant Hamachi dish with Peruvian influences, paired with Spanish Albariño. Pibil Gyozas, pork dumplings with Mexican spices, complement an Argentine Malbec, while Olive Octopus on a tostada pairs with Chilean Chardonnay. Duo Bao Buns offer Pork Pastor with pineapple and Tempura Shrimp with Sriracha aioli, matched with Spanish Tempranillo. The main, Seco Short Ribs, slow-cooked with Peruvian sides, is paired with bold Chilean Cabernet. Finally, Crema Volteada, a caramelized dark chocolate and blood orange dessert, is finished with Spanish Sherry PX.

Chef Edgar Hernández - Toro
I’ve been in the industry since 2018, starting my career in New York City. I hold a degree in Gastronomy from Veracruz, Mexico. Throughout my journey, I have worked in multiple hotels and restaurants across New York, Chicago, Los Cabos, and Aspen, refining my skills and culinary vision.
Currently, I am the Chef de Cuisine at Toro Snowmass, Aspen Snowmass, where I bring my passion for bold flavors and high-quality ingredients to every dish.
Chef José Linares - Las Montañas
I have been in the industry since 2013, after graduating from Institut Paul Bocuse in Lyon, France. My passion for cooking began when I first tried Indian cuisine, which expanded my culinary perspective.
I have worked at several prestigious restaurants, including Miramar in Spain (2015, 2 Michelin stars), Mirazur in France (2016, 3 Michelin stars), Astrid & Gastón, one of the top restaurants in Latin America, and Osso, a leading restaurant in Peru.
